Let's remember together that not only vegetables, but also fresh meat was once in season and that it was valuable enough to be celebrated.
For centuries, the pig was a kind of living larder: when it was warm and sunny and food was plentiful, it was fattened up. When it got cold and nothing grew in the fields, it was slaughtered, cut up, sausaged and salted, and the innards and blood were processed and eaten fresh. And because this was and is a festival that should be celebrated, it was and is not just called slaughter day, but "Sautanz".
MAX STIEGL doesn't like to be restricted. He is a chef, landlord at Gut Purbach, winegrower, gives cookery courses and is committed to good, forward-looking gastronomy. He cooks everything he can find in Burgenland: the delicious vegetables of the Seewinkel, the fine game birds of the Leithaberg, the fish of the lake and, when the occasion arises, horse's head and reeds. All this has earned him a Michelin star and the title of "Chef of the Year".
