Stinging Nettle Soup and Flower Sweets – taste good!

Healthy leaves and flowers, and they taste fantastic too! Yes, there really is something of the sort. On the Alm (high pastures) of the Gasteiner Valley ingredients grow for a healthy, and at the same time tasty menu that you can pick while walking on a guided Herb Walk. This really makes walking enjoyable!

The trend is literally speaking “back to nature”, and that walking is enjoying a revival is no secret. But in the Gasteiner Valley they have certainly come up with a great idea of how to make walking even more “tasteful”: The Herb Walk. The start of this natural experience is Dorfgastein – a village with rustic style houses and farmhouses, the ideal place for holidaymakers looking for regeneration, but also for those who like to walk and above all enjoy good food.

Once a week under the professional guidance of Felix Salfitzky, walking guide and chef of the “Österreichischer Hof”, guests can enjoy the local Alm world (high pastures) while looking for the ingredients for a herb menu. All that one need is a bag, a penknife, and most important a well schooled eye, which does not over look such plants that one would normally just walk past. Or perhaps make a large bow around it, for instance in the case of stinging nettles. Everyone has got to know the unpleasant effects of its small thorns. But when you put your hands into a plastic bag, you can pick stinging nettles without a problem. As an ingredient to herb soup this vitamin rich “weed” also adds healthy nourishment. There are many other herbs and flowers – some of which have names that have never been heard of before – you will find them growing in luscious green meadows and quite often by the wayside: “Giersch/aegopodium podagraria, Quendel, Gundermann/Glechoma Hederacea, Vogelmiere/Stellaria media, but also Schafgarbe/Achillea Millefolium, Fichtenwipfel” and dandelion are collected while walking up and down hill, under the watchful eye of your guide. When enough herbs have been collected, then it’s back uphill again to the Kögleralm. Here the collected treasures will be combined to make a delicate dish. Wild herb soup, herb vegetables, and as dessert a sweet herb dessert made with flowers and “Fichtenwipfeln”. Treats for your taste buds are clover flowers dipped in chocolate, “Gundermannblätter” and “Fichtenwipfeln”. As a final mouth watering treat your host will serve the mountain hut’s own speciality: herb pancakes with a sweet pesto. Afterwards you walk back down to the valley feeling regenerated, or you could stay overnight at one of the many surrounding mountains huts.
